Ahhh beer... it can be SUCH A SIMPLE THING. Imagine you've got an American Lager. Maybe circling that perfect 5% ABV territory. Maybe there's a crystal-clear, straw-hued body. You could probably aim for some mild floral aromas that usher in a light nose of freshly baked bread and hay. Maybe coax out a dry, clean, crisp body with some delicate malt presence that levels out with a firm bitterness. It's simply... beer. Enough said.

We whipped up a beer that might attract some INTERNATIONAL INTRIGUE. A 5.3% Export Lager that pours crystal clear and golden with fluffy white foam. With the hop character of a German Pils and a stronger malt profile, it's a decidedly in-between lager that balances freshly baked baguette and toasted bread with the herbal noble hop touches of alpine flowers and earl grey tea. Highly carbed, well-weighed bitterness, and a hybrid nature that'll keep even the most seasoned spies searching for another sip.

This experimental pilsner hopped entirely with HBC 1134 is SIMPLY LOVELY. This futuristic modern hop varietal bred to emulate traditional European Noble hops shines with floral aromatics of citrus blossom and lilac before easing onto your palate with stronger hop flavors of black tea, hay and dry apricot in every crisp sip.

It may still be winter, but we're filled with warmth as we see LOVE ALL AROUND US. This hefty Cherry Pie-inspired Sour Ale features a blend of Montmorency and Balaton Tart Cherries, Graham Cracker, and Vanilla, striking the perfect balance between sweet and tart. Peek BETWEEN TWO CACTI - you might be shocked watcha find. What if it was a Ranch Water Seltzer, inspired by the heart of West Texas. Refreshing, delightful, and as zippy as it is clear, this seltzer boasts some fine flavors of herbaceous botanicals and lime zest straight from the rugged ranges of the lone star state.

It looks like milk, smells like a field of citrus, and tastes like Orange Julius. This is SNOW GROVE, a confounding combination of dreamy deliciousness. Served on nitro for an effortless snowy flow of flavor, this Orange Creamsicle Seltzer has an unbelievable mouthfeel somewhere in between a vanilla shake and dreamsicle frosty. Aided by the magical thickening of soft serve mix, pound upon pound of freshly-zested citrus, and just a tiny touch of vanilla - it's a wonder of winter wizardry with a twist of SoCal summer.

Fret not about the cold, when you can warm up with THE SPICE OF WINTER. This is a Winter Sangria, a warming, spiced, wine-laden medley of Zinfadel, Tart Cherry, Blueberry, Cinnamon, Star Anise, Clove, and Orange Zest. Complex with an immediate front-facing hit of well-balanced, jammy wine and slowly opens up into a cozy combo of secondary tart cherry among more subtle complements warming spices and orange. We thought this happened ONLY IN THE MOVIES - crafting with science and creating magic. But dang is this new Segal Ranch Experimental D5-055 hop cinematic. We blended this beautiful new hop for its first ever use with some good 'ol Citra and Strata for an experience worthy of the silver screen. Vivid scents of honeysuckle, nectarine, and papaya precede flavors of lychee and lime zest among a medium bitter, dry and crisp, and highly floral body. Let's go to the movies.

We were honored to partake in a day of wisdom with the industry innovators from Faction Brewing, Rodger and Claudia. We count them not only as friends and colleagues, but pioneers of the pale, helping to shape the beer scene in NorCal. Inspired by their award-winning Pale 586, and sharing a love for the long-unnamed hop, we brewed an XPA that incorporates it all. This is ACCESS TO THEORY, an Extra Pale Ale brimming with HBC 586, Strata, Nelson, and Mosaic. Light-bodied, kissed with flavors of mango, guava and a citrus hop punch, and perfect drinking for those who’ve developed a Krush on their own theories.

When you love something, sometimes IT COMES BACK TO YOU. And boy do we love our New Zealand-tinged hazies. This newest one highlights Nelson, Riwaka, and Motueka, and just a bit of Citra. There's big aromas of underripe pineapple, mango, blueberry and lime zest, and zesty citrus flavors with more lime and tangerine. 6.5% and easy-drinking, this is a hazy wonder from south of down under.

WHEN THE DAY IS THROUGH, we all want the same thing, don't we? A West Coast IPA that rips. That was the intention behind this 6.7% brew with a collection of Mosaic, Nelson, Riwaka, Chinook, and Amarillo hops that'll make your whole day pop. This is a clear, pale yellow pour that hits you with aromas of guava and lime zest before doling out notes of more tropical fruit, passionfruit, and grapefruit zest. Now how about another day?

It's TIME TO DREAM of the ideal modern West Coast IPA. For us, that's a 6.9% hoppy tropical puncher of Citra, Mosaic, Strata, and Simcoe that drinks easy and hits with just the right amount of bitterness. Aromas of passion fruit and white peach with big, bold flavors of pineapple, mango, and lime. What more could we dream for?

You're the meaning in my life, YOU'RE THE INSPIRATION. Oh wait, do you also serenade your hazies? We've got a load of guava, mango, and juicy fruit gum aroma that excels with low bitterness in between additional flavors white peach and lime zest. Crack open a can and see it sing.

This haze craze is GROWING ON US - so why wouldn't we embrace it for beer batch #400! We recruited a roster of Nelson, Citra, Galaxy, and Cashmere hops to make a well-balanced haze delivery system. This juicy beverage shines with guava, pineapple, white nectarine, and tangerine zest aromas and notes of guava, pineapple, and jackfruit. Tropical, citrusy, low bitterness, and a penchant for growing on you with every sip.

SAY WHAT YOU WILL, but the haze craze isn't ending anytime soon. You created the optimal hazy; a yellow pour with aromas of tangerine, lychee, and white grapefruit with a low bitter profile, and juicy, juicy melon. It's time to REIGNITE YOUR SOUL with the power of the Hazy DIPA. This is an 8.3% punchy hazy with a trio of Citra, Strata, and Cashmere hops. A bright, hazy pineapple-juice body bursts with aromas of guava, apricot and tangerine. Well-hidden alcohol weaves through a juicy body of lovely flavors like honeydew melon and mango with a zesty finish. Let's reignite.

If it's Czech-influenced and it's half-dark, it's POLOTMAVÝ. This is a Czech-style Amber Lager lovingly crafted to embody that garnet-hued, offbeat beauty commonly enjoyed off a Lukr faucet, in a Tübinger mug, seated in a storied beer hall in Prague - or you know, our tasting room in Anaheim. The aromas are warmingly malt-forward with some cracker, freshly-baked brown bread, and just a hint of floral, spicy Saaz character. A bit of malt toastiness lingers on the palate before making room for more biscuit, cracker, and a touch of floral character. Na Zdraví!

It’s Batch #420 - of course we’re getting Riip’d. This is Dank After Dark, a drink of deviance we brewed up with our friends at RiiP after both medaling with Black IPAs at GABF. In a late-night (brainstorm) sesh, we pontificated on how to make the most dankity dank Black IPA ever. And you know what man… we think we got it. A ton of Simcoe, dry-hopped with Strata, Krush, Mosaic, and Columbus Cryo, and finished off with Riwaka Hop Kief alongside Pineapple Express and OG Kush Terpenes. It’s a roasty, toasty, hoppy hit that’ll have you saying, “Yeah man… Yeah."

A beautiful upside in this stretch of DAYS LOSING LIGHT... the solemn beauty of winter barrel releases. Concocted from the blend of two Maplewines (Barleywines utilizing maple syrup as a major part of the fermentable sugars), these liquids rested in a blend of Old Fitzgerald barrels for 34 months before syncing with a barrel of Barleywine aged for W.L. Weller 7yr Barrels for 42 months. The resulting liquid amber sat on Comoros Vanilla Beans for a sweet snapshot of solace inspired by the frigid Northeast. Pouring a burnt mahogany, this hybrid smells of bourbon, treacle, marshmallow and oak; a precursor to the rounded tastes of toffee, maple syrup, vanilla, bourbon, and fudge that follow.

Enjoy a Chardonnay 2023 vintage straight from the San Luis Obispo Coast AVA, courtesy of our friends from Groundwork. A clear, pale yellow pour catches the glint of the sun beautifully as aromas of lemon verbena, lime zest, baked apple, and asian pair waft gently on this fruit-forward Chardonnay. A medium acidity tenderly houses tasting notes of apple, white flowers, and lemon peel with a slight mineral finish.

This is RADIANT SANGIOVESE, a 2023 vintage from our friends at Terah Wine Co. Sourced from the Mokelumne River AVA region, this Italian Varietal Sangiovese benefits from the cooler Pacific Ocean climate with vibrant, rustic expressions, a medium body, and approachable acidity. We’re experiencing fruity notes of strawberry, blackberry, and ripe cherry with subtle hints of earthy Tellicherry pepper and mild herbal additions that host an undercurrent of plum and tobacco.
